Portions: 8 Portions
- puff pastry: 1 roll
- apples: 3
- juice of half a lemon
- 1 egg to brush
- sugar to cover
- 180 gr frangipane cream or custard (or 3 tablespoons of jam)
For the frangipane cream:
- 60 gr soft butter at room temperature
- 60 gr powdered sugar
- 1 egg medium
- 60 gr almond flour
- 25 gr corn flour (or 00 flour)
- almond essence (optional)
How to make apple pie with puff pastry
As I have already anticipated, this apple and puff pastry cake can be prepared in 3 Variants. With the Marmalade (in this case choose a neutral taste like that of Apricots), with the Custard or with the Frangipane cream. If you choose the version with cream, it’s the first thing you need to prepare. I chose the frangipani. Once ready, leave warm the cream.
Cut the apples into 4 parts, peel them and remove the core. You can leave the peel on if you want. Cut the apples into slices half a centimeter thick. Remember to sprinkle the apple slices with lemon juice to keep them from blackening.
Take the puff pastry and place it, with all the oven paper in a pan. Pour the cream on the bottom and spread it with a spoon.
Cover the cream with the apple slices arranging them in a radial pattern.
Sprinkle the apples with sugar and then fold the edges. Brush the edges of the puff pastry with the beaten egg and cover with Brown sugar.
Bake the apple pie with puff pastry in a preheated static oven at 200° for about 30-40 minutes. The cake is ready when the edges are golden brown.
Take your apple pie out of the oven and let it cool before serving.
Like all desserts with puff pastry, it is always preferable to heat it once it is cold so that the pastry becomes crumbly again.
