It doesn’t matter if they are Big or Small, they must be Tasty! Personally I don’t like frozen ones, they are not very tasty and have no more water inside. Portions: 2 Portions
- 200 gr. spaghetti
- 700 gr. clams
- 2 cloves garlic
- half glass White wine
- fresh parsley
- olive oil
- grated lemon zest optional
How to make spaghetti with clams
Put the clams already drained in a bowl with cold water and wash them a couple of times to eliminate any impurities.
As for the sautéed clamsI prefer filter the broth from the clams to make sure there is no sand in my spaghetti. Then, put the clams in a large-bottomed pan, cover with the lid and put them on the stove. In a couple of minutes they will be open.
Remove the clams with a slotted spoon and filter the broth with a cotton cloth. Keep it aside.
Shell the clams leaving some with the shell to decorate.
In the same pan pour a generous round of olive oil. Add the garlic (if you want a more intense flavor, chop it) and a little chilli (to taste).
As soon as the garlic begins to fry, add the clam broth.
As soon as it starts boiling again, add the White wine and let the alcohol evaporate.
Also add some chopped parsley and let it simmer for a couple of minutes.
Meanwhile, cook the pasta and when 3-4 minutes are missing at the end of cooking, transfer it to the pan. It is this step that makes it creamy.
When the pasta is cooked, add the shelled clams and mix.
Finally add the ones with the shell and a little more parsley. If you want to give a further scented note you can add a little grated lemon zest.
