  • 30 gr bottarga
  • 2 cloves garlic
  • olive oil
  • chili pepper

How to make spaghetti with bottarga on pumpkin cream

Clean the pumpkin removing the peel, seeds and internal filaments e cut it into cubes.

In a saucepan pour a drizzle of olive oil and add a clove of garlic and a piece of chilli.

As soon as the garlic begins to fry, add the pumpkin. Salt and add a little water until it is almost covered. Cover with the lid and cook for about ten minutes.

As soon as the pumpkin is cooked, remove the garlic and blend the pumpkin until a velvety cream is obtained. Keep aside warm.

Throw the spaghetti in boiling water and in the meantime prepare the bottarga. In a pan pour a drizzle of olive oil and add a clove of garlic and a little chilli.

Grate the bottarga and as soon as the garlic begins to fry, pour 1/3 of it into the pan together with a little chopped parsley and half a ladle of pasta cooking water. Remove from the heat.

When there are 2-3 minutes before the pasta is cooked, transfer it to the pan with the bottarga. Finish cooking the spaghetti by adding cooking water if necessary.
