Ingredients for 3 people of spaghetti with Pugnochiuso

  • 400 g. of spaghetti
  • 300 g. of mozzarella
  • 100 g. of pitted black olives.
  • 4 S. Marzano tomatoes
  • 1 clove of garlic
  • extra virgin olive oil
  • basil
  • Salt and Pepper To Taste

Preparation

A really simple recipe to prepare. A few steps will be enough: take a pan and fry the garlic in a drizzle of oil. Now we put the cherry tomatoes cut into coarse chunks. We take the olives and insert them (we do not use the ones that have already been shelled, but we pit them with our hands. They will have more flavor). Season with salt and cook just 2 or 3 minutes no more.

Now let’s put the pot and fill it with water. We drop the pasta and add salt: once cooked (obviously al dente), drain it and dip it into the pan. We mix well, turning everything gently.

I recommend, do not be too aggressive with the ladle since the pieces of tomato will not have to split. Turn off the heat: take the dried mozzarella (otherwise use the fior di latte) and make it into pieces. We put it in the pan and toss: season with pepper, add a drizzle of abundant oil and garnish with basil. Don’t add Parmesan or pecorino, but it’s always your taste if you want a handful on your pasta dish.
