Penne with spiced vegetables are a very simple dish, enhanced by a condiment based on vegetables, aromatic herbs and fragrant spices, which flavor it. A mix of colors and a riot of flavors and aromas: the pasta will be cooked al dente in abundant salted water and then flavored with a spicy sauce that transforms an anonymous vegetarian dish into a delicious first course.

To prepare this dish you need a lot of vegetables, aromatic herbs, and a supply of spices, ingredients that vary according to the season, availability and personal choice, to do it again several times, always different, without ever getting tired; it is in fact one of those perfect dishes to be enjoyed in the lunch break at work, as a single dish. A perfect match for a balanced dish, rich in fiber and vegetable proteins, anti-inflammatories and antioxidants thanks to the presence of spices! Here are the steps of the recipe.

Penne with spiced vegetables

Ingredients for 6 people

  • 600 g of wholemeal penne rigate
  • a pack of 500 g of fresh vegetables for traditional minestrone, already cut:
    potatoes, carrots, borlotti beans, tomatoes, zucchini, cabbage, savoy cabbage, green beans, peas, celery, spinach, leek, pumpkin, parsley


  • an onion
  • two sweet green chillies, friggitelli
  • a clove of garlic
  • flavorings and spices to taste:
    rosemary, sage, mint, thyme, oregano, fresh basil,
    half a teaspoon of: turmeric, sweet paprika, ginger, coriander, chilli
  • 400 g of tomato pulp
  • extra virgin olive oil
  • salt and pepper


In a pan, sauté with a little oil, onion, garlic and friggitelli; add the mixed vegetables for minestrone, and sauté them for a few minutes; add the chopped tomatoes, spices and finely chopped aromatic herbs, salt and pepper. Pour half a glass of water and cook with the lid on for half an hour, until the vegetables are cooked but still firm, and the sauce reduced.

Cook the pasta, drain it al dente and pour it into the pan with the sauce; skip it for a minute to flavor it: serve it with a drizzle of oil and a sprinkling of oregano and chives. We do not recommend adding grated Parmesan, to allow you to fully savor all the flavors of these tasty penne with spiced vegetables.
