For lovers of zucchini or a simple, cheap and light dish, Spaghetti alla scapece are a real goodness. It is a very quick and simple first course to prepare, also useful for those who follow a healthy and balanced diet. They might look similar to spaghetti alla Nerano but are actually very different. The protagonists are, without a doubt, the courgettes, which can also be used as a side dish as well as a condiment for pasta.

Moreover, thanks to the use of courgettes, it is a dish that can also be consumed by vegans or vegetarians as everyone can choose the type of pasta they prefer. Usually, I use fusilli as they blend better with all the sauce. The ingredients that I indicate are for about 4 people.

Spaghetti alla scapece, Ingredients

  • 400 g of spaghetti (other formats are fine too)
  • 3 Zucchini
  • 1 clove Garlic (if preferred)
  • Red wine vinegar
  • Mint
  • Salt, Seed oil, Extra virgin olive oil to taste

Preparation of Spaghetti alla scapece

First of all, you have to wash the courgettes, cut the ends and cut them into slices. Then put them in a bowl with a little salt and let them rest so that they drain a little of the vegetation water. Then rinse them well and dry them. Now you can fry them with well-heated seed oil in a saucepan. (If you don’t want to use frying, you can also stew them.) After frying them, let the oil soak up well with paper and add a little vinegar.

Meanwhile, cook the spaghetti. And, in a large non-stick pan, add extra virgin olive oil and the garlic clove cut in half and brown for a few minutes. Then pour the fried zucchini and seasoned previously. Combine everything with the spaghetti and mix well by adding a little minced mint. Finally, serve and if you prefer you can sprinkle with Parmesan cheese. Enjoy your meal!
