There pasta alla puttanesca (or Spaghetti alla puttanesca) it’s a Neapolitan first course Simple and Tasty prepared with Fresh tomato, Black olives, Capers, And Chili pepper. A recipe is so good that it was “adopted” from the Roman cuisine in which Variant also finds the anchovy! As for the pasta shape, the Neapolitan recipe foresees Spaghetti, Vermicelli, or Linguinethat Roman Spaghetti or Penne.

Preparing spaghetti alla puttanesca is a lot Quick and easy and the result really Exquisite! I opted for the version with Anchovy which makes this first dish again more savory but if you prefer you can omit it.   • 20 Piccadilly tomatoes
  • olive oil
  • 1 clove garlic
  • chili pepper
  • 4 fillets anchovy (in the Roman version)
  • 2 spoons capers
  • 2 spoons of black olives from Gaeta
  • parsley or oregano
  • 200 gr spaghetti (pens in the Roman version)

How to make pasta alla puttanesca

Peel the tomatoes and cut them into fillets. Alternatively, you can use peeled tomatoes. Keep them aside.

In a large-bottomed pan pour a generous round of olive oil and add the chili and garlic.

As soon as the garlic begins to fry, add the anchovy fillets and dissolve them in the oil with the back of the spoon. In the original Neapolitan recipe, there are no anchovies.

Also add the capers and black olives from Gaeta (I didn’t have them and I used some others).

Raise the heat slightly and add the tomato fillets.

Salt, add the parsley, and sauté for a couple of minutes.

Dilute with half a glass of hot water, cover with the lid and cook for about 7-8 minutes.

The tomato must soften. Once ready, add more chopped parsley.

Cook the pasta and when there are 2-3 minutes left at the end of cooking, transfer the spaghetti to the pan with the sauce. Stir until cooking is complete, adding cooking water as needed.
