Hard-boiled eggs in tomato sauce
- 4 eggs
- 400 g of tomato pulp
- 3 tablespoons of extra virgin olive oil
- half onion
- salt and pepper
- a basil leaf
- chili powder (optional)
Wash the eggs and make them hard-boiled: in a saucepan, boil the water (not salted); when it comes to a boil, lower the heat and gently place the cold eggs from the refrigerator with a spoon, making sure that no cracks form; count 12 minutes for the firm yolk. Remove the eggs from the water and cool them immediately by holding them under a jet of cold water.
Meanwhile, prepare the tomato sauce. Put the oil in a pan and brown the sliced onion; add the tomato pulp and cook over low heat for 5 minutes together with the fresh basil; salt and add a little pepper or chilli (optional).
Cut the hard-boiled eggs in half vertically and place them in the tomato sauce; let them heat up for a few minutes, then serve them upside down, with their sauce and a sprinkling of oregano.
