Cold Marinara Rice – Golden Recipes

On a hot summer Sunday, having guests for lunch, I thought about cooking a fresh dish to avoid serving the usual baked pasta. I was thinking of making a fish dish, and I thought of combining it with cold rice which always makes good salads. The result, much appreciated is the cold rice all marinara, with mussels. shrimp, salmon, cherry tomatoes, and rocket. It is prepared in a short time and very easily. The only hassle is cleaning the mussels which you obviously have to shell. They are fine if you want also clams and cuttlefish cut into small pieces. The color and aromas given by the tomato and rocket will do the rest. A guaranteed success dish that superbly replaces rice salad. Let me know how it came out 🙂

Ingredients (4 people) 

200 gr of rice
200 gr of shrimp: 100 gr of salmon in oil
100 gr of tuna in oil
1 Kg. Of mussels
100 gr of rocket
5 cherry tomatoes
1 tablespoon of extra virgin olive oil

How to make Cold Marinara Rice

Cook the rice for about 15 minutes in boiling salted water



and let it cool well, arrange it in a bowl

then cook the shrimp for about 10 minutes, I used the frozen ones. Drain and let them cool


At this point, take the mussels and put them in a pot on the stove and cover. As soon as they are all open, let them cool and shell them


Add the mussels and shrimps to the rice


Also add the salmon and tuna


the cherry tomatoes cut into small pieces

and finally the rocket. Salt, add the oil and lemon, and mix. Let it rest in the fridge for a couple of hours
