Do not turn up your nose, it is not a real carbonara, it is a variant, perhaps a little more tasty since there are aubergines, onion. A prettier version, basically the usual carbonara. But let’s see how this dish is prepared and what are the delicious ingredients for this dish.
Ingredients for 4 people of carbonara
- 400 gr of spaghetti
- 2 coarse eggplant
- chili pepper
- Seed oil for frying
- olive oil
- a quarter of an onion
- 5 eggs

- mixed grated cheese (pecorino romano and parmesan)
First we wash the aubergines, dry them and then cut them into chunks (first half lengthwise, then into strips and then into chunks). Then fry them in a pan with hot oil (not at 170 degrees otherwise they could be too crunchy). Let them brown and then dry them with a paper towel. Let them dry and prepare the rest.
Let’s now fry the aubergines in a little oil with the onion. Then take the pan, a drizzle of oil and let the onion dry: add the aubergines and let it all flavor.
Meanwhile, put the pot with the water on the stove: as soon as it reaches the temperature, lower the pasta and add salt. In a bowl, beat the eggs with the cheese (just as if it were the classic carbonara). We add salt and pepper and make our cream. Add a little cooking water. Once the pasta is cooked, pour it into the pan with the aubergines. Mix well with the heat off and let the temperature lower. We drop the mixture with the eggs into the pan and mix. Enjoy them hot.
